Vegan: Potato Soup with Kohlrabi Leaves

The perfect vegan: potato soup with kohlrabi leaves recipe with a picture and simple step-by-step instructions.

  • 1 Onion
  • 2 Carrots cut
  • 3 Diced potatoes
  • 1 Diced Kohlrabi
  • 1 Leaves
  • 1 tbsp Alsan
  • 2 tbsp Vegetable broth *
  • 1 liter Water
  1. Clean, wash and cut the vegetables …. the shape does not matter …. Cut the kohlrabi leaves about 1-2 hours beforehand and put them in cold water, so some withered leaves become really crisp again, then cut them .
  2. Heat the tablespoon of Alsan in a saucepan and sear the onion in it, then add the carrots, kohlrabi and potatoes, fry everything for a few minutes, the moisture only escapes.
  3. Pour in the vegetable stock (with the water) and bring to a simmer.
  4. Now add the cut kohlrabi leaves and let everything simmer until it is done. It only cooked for a few minutes (5 minutes), then turn off the heat, the hot plate and the pot have enough residual heat to cook everything.
