Oven Vegetables with Turkey Breast

The perfect oven vegetables with turkey breast recipe with a picture and simple step-by-step instructions.

  • 1 kg Small potatoes
  • 500 g Carrots
  • 250 g Beetroot, cooked
  • 3 Pc. Onions
  • 500 g Turkey breast fillet
  • Rosemary and thyme to taste
  • 2 tbsp Red curry paste
  • Salt, pepper, paprika powder
  • 3 tbsp Extra virgin olive oil
  1. Thoroughly brush the potatoes & carrots under running water and cut into bite-sized pieces. Peel and quarter the onions. Roughly dice the beetroot and turkey meat.
  1. Put the vegetables and meat in a large bowl. Pour olive oil over it. Strip the rosemary (I’ll take a good handful) from the stalks, coarsely chop together with the thyme and add to the vegetables. Everything with the curry paste, salt, pepper and who likes garlic.
  1. Mix everything well with your hands until the herbs and spices are well distributed. Put everything on a baking sheet with a high rim and distribute. At 200 ° degrees circulating air approx. 60 minutes. to bake. Stir once in between.
