Saddle of Pork Steaks Caprese Style

The perfect saddle of pork steaks caprese style recipe with a picture and simple step-by-step instructions.

For the spaghetti:

  • Salt pepper
  • 1 tbsp Clarified butter
  • 2 Tomatoes
  • 1 pack Mozzarella
  • 75 ml Noilly Prat, dry vermouth
  • 100 ml Beef broth
  • 2 tbsp Cold butter
  • 250 g Spaghetti
  • Salt water
  • 0,5 bunch Basil
  • 1 tbsp Butter or olive oil
  1. Preheat the oven to 200 ° C (top / bottom heat).
  2. Cook the spaghetti in salted water according to the instructions on the packet.
  3. Wash the tomatoes and cut into not too thin slices, also cut the mozzarella into slices.
  4. Wash the pork loin steaks and pat dry, season with salt. Heat clarified butter in a pan. Sear the pork loin steaks on each side for about 2-3 minutes, place in a baking dish and cover with tomato and mozzarella slices. Sprinkle with pepper and bake in the preheated oven for about 5-8 minutes.
  5. Deglaze the frying fat with Noilly Prat, pour in the meat stock and let it reduce a little. Season with salt and pepper.
  6. Wash the basil, shake dry and cut into strips. Drain the spaghetti and put back in the saucepan. Mix with butter and basil and let stand on the switched off stove for about 5 minutes.
  7. Stir cold butter into the sauce and remove from the stove. Arrange the pork loin steaks on a little sauce and garnish with basil and serve the spaghetti on preheated plates.
  8. Zucchini-paprika-vegetables and mixed lettuce tastes good with it.
