flesh

  • 500 g Ground beef
  • 1 piece Onion
  • 1 piece Egg
  • 1 tsp Beef broth
  • 2 tbsp Breadcrumbs
  • 1 tbsp Chopped parsley
  • 1 pinch Salt and pepper
  • 350 g Mushrooms
  • 1 tbsp Clarified butter
  • 3 tbsp Cranberries / Cranberries

sauce

  • 100 ml Water
  • 200 ml Cream
  • 2 tsp Beef broth
  • 200 ml White wine
  • 1 tsp Honey
  • 1 tbsp Balsamic cream
  • 2 tbsp Sauce binder dark
  • 1 pinch Salt and pepper
  • 1 pinch Nutmeg

croquettes

  • 375 g Potatoes
  • 2 piece Eggs
  • 15 g Strength
  • 15 g Butter
  • 1 pinch Salt and pepper
  • 1 pinch Nutmeg
  • 3 tbsp Breadcrumbs

Meatballs

  1. For the meatballs, peel the onions and cut them into small cubes, mix with the minced meat in a bowl. Add egg, beef broth, breadcrumbs and chopped parsley and season with salt and pepper. Form small meatballs (approx. 3 cm in diameter).
  1. Clean and quarter the mushrooms. Fry the meatballs in the pan in a little clarified butter until crispy, add the mushrooms and fry briefly with the meatballs.

sauce

  1. For the sauce, bring the cream, water and beef broth to the boil. Add white wine, honey and balsamic cream and bring to the boil again briefly. Thicken with a sauce thickener and season with salt, pepper and nutmeg.
  1. Then add the sauce to the meatballs in the pan and stir – bring everything to a boil.

croquettes

  1. For the croquettes, boil the potatoes, then peel them and press them through a potato press. Let cool down a little. Melt butter.
  1. Separate the egg yolk from the egg white. Then mix the egg yolk, starch and melted butter into the potatoes. Season with salt, pepper and nutmeg.
  1. Form small croquettes (form small balls, roll and press the ends lightly). Turn these first in egg white and then in breadcrumbs. Bake the breaded croquettes in a deep fryer in hot frying fat until they are golden brown in color.
  1. Serve the Köttbullar with croquettes and cranberries, garnish with a little parsley if you like. I recommend lamb’s lettuce with fresh lemon oil vinegar dressing as a side dish.
