Chocolate Pancakes with Fresh Fruits

The perfect chocolate pancakes with fresh fruits recipe with a picture and simple step-by-step instructions.

Pancake batter:

  • 2 Eggs or 2 tbsp soy flour
  • 300 ml Soy milk
  • 150 g Spelled flour type 630
  • 2 tbsp Unsweetened cocoa
  • 2 tbsp Whole cane sugar

Fresh fruits to taste:

  • Nectarine
  • Kiwi
  • Strawberries

Chocolate cream

  • 300 ml Soy cream
  • 2 tsp Unsweetened cocoa

Others:

  • Powdered sugar
  • Canola or grapeseed oil
  • Paper towels
  1. Whip the soy cream with the cocoa and place in the refrigerator for 1 – 2 hours or in the freezer for 15 minutes.
  2. Put the eggs (or soy flour) and soy milk in the blender and beat until frothy. Gradually add the flour, cocoa and sugar. Mix for another 10 minutes.
  3. Cut the fruit into slices. Heat the oil in the pan.
  4. Put the dough in the heated pan and bake on both sides. Remove from the pan and dab with a paper towel.
  5. Arrange on a plate (if you like: dust with powdered sugar) the fruit on top and decorate with the chocolate cream.
