Chocolate Pancakes with Fresh Fruits
The perfect chocolate pancakes with fresh fruits recipe with a picture and simple step-by-step instructions.
Pancake batter:
- 2 Eggs or 2 tbsp soy flour
- 300 ml Soy milk
- 150 g Spelled flour type 630
- 2 tbsp Unsweetened cocoa
- 2 tbsp Whole cane sugar
Fresh fruits to taste:
- Nectarine
- Kiwi
- Strawberries
Chocolate cream
- 300 ml Soy cream
- 2 tsp Unsweetened cocoa
Others:
- Powdered sugar
- Canola or grapeseed oil
- Paper towels
- Whip the soy cream with the cocoa and place in the refrigerator for 1 – 2 hours or in the freezer for 15 minutes.
- Put the eggs (or soy flour) and soy milk in the blender and beat until frothy. Gradually add the flour, cocoa and sugar. Mix for another 10 minutes.
- Cut the fruit into slices. Heat the oil in the pan.
- Put the dough in the heated pan and bake on both sides. Remove from the pan and dab with a paper towel.
- Arrange on a plate (if you like: dust with powdered sugar) the fruit on top and decorate with the chocolate cream.
