Wild Garlic Sauce with Spaghetti …

The perfect wild garlic sauce with spaghetti … recipe with a picture and simple step-by-step instructions.

  • 250 g Spaghetti
  • 2 teaspoon Salt
  • 2 tablespoon Extra virgin olive oil
  • 1 Diced onion
  • 1 Garlic cloves chopped
  • 1 tablespoon Tomato paste
  • 1 kl. Can Tomatoes happened
  • Black pepper from the mill
  • Salt
  • 1 pinch Sugar
  • 0,5 teaspoon Chilli flakes
  • 1 teaspoon Dried oregano
  • 20 g Butter
  • 20 fresh Wild garlic leaves
  1. For the sauce, heat the olive oil in a small saucepan and fry the diced onion in it until translucent, finally let the chopped garlic clove and the tomato paste sizzle for about a minute and deglaze everything with the tomatoes.
  2. Second, cook the pasta with the salt in plenty of boiling water until al dente and pour it into a sieve.
  3. Stir the pepper, salt, sugar, chilli flakes and oregano into the sauce and let it simmer gently for about 4 minutes.
  4. During this time, wash the wild garlic leaves, shake dry, lay them on top of each other and cut away the stalks up to the base of the leaves. Roll up the leaves lengthways and cut into very fine strips.
  5. Refine the tomato sauce with 20 g butter and stir in the freshly cut wild garlic with the butter. Always use wild garlic fresh and never cook it, otherwise it will lose its wonderful taste!
  6. Serve the wild garlic tomato sauce with the spaghetti and add some grated Reggiano to serve yourself. It’s just a shame that the wild garlic season is so short!
