Sardinian Style Potato Salad – Delicious Spring Dish –
The perfect sardinian style potato salad – delicious spring dish – recipe with a picture and simple step-by-step instructions.
- 750 gr Waxy potatoes
- 4 piece Tomatoes
- 4 tbsp Fresh basil
- 12 piece Black olives, seedless
*** for the dressing ***
- 1 piece Finely chopped tomato
- 6 piece Black olives, finely chopped
- 5 tbsp Olive oil
- 1,5 tbsp White balsamic vinegar
- 1 piece Chopped shallot
- Wash the peeled potatoes well and cook in a saucepan with boiling salted water for about 15-20 minutes until they are soft. Drain the potatoes, rinse again thoroughly and then either roughly dice or cut into thicker slices and put in a bowl. Wash the tomatoes, quarter them and add to the potatoes.
- Add the chopped olives and the finely chopped basil, also add.
- For the dressing, put all the other ingredients in a screw-top jar and mix carefully while shaking. Now fill the salad in a serving bowl, season with salt, pepper and season to taste. Let it sit for a few minutes.
- Serve this salad either with baked fish fillet (we had pollack fillet with it) or with meat skewers.
