Sardinian Style Potato Salad – Delicious Spring Dish –

The perfect sardinian style potato salad – delicious spring dish – recipe with a picture and simple step-by-step instructions.

  • 750 gr Waxy potatoes
  • 4 piece Tomatoes
  • 4 tbsp Fresh basil
  • 12 piece Black olives, seedless

*** for the dressing ***

  • 1 piece Finely chopped tomato
  • 6 piece Black olives, finely chopped
  • 5 tbsp Olive oil
  • 1,5 tbsp White balsamic vinegar
  • 1 piece Chopped shallot
  1. Wash the peeled potatoes well and cook in a saucepan with boiling salted water for about 15-20 minutes until they are soft. Drain the potatoes, rinse again thoroughly and then either roughly dice or cut into thicker slices and put in a bowl. Wash the tomatoes, quarter them and add to the potatoes.
  1. Add the chopped olives and the finely chopped basil, also add.
  1. For the dressing, put all the other ingredients in a screw-top jar and mix carefully while shaking. Now fill the salad in a serving bowl, season with salt, pepper and season to taste. Let it sit for a few minutes.
  1. Serve this salad either with baked fish fillet (we had pollack fillet with it) or with meat skewers.
