for the baked potatoes

  • 6 Jacket potatoes

Instructions

  • Roast the grains of paradise in the pan until they smell and start to bounce, now coarsely mash the grains to the meat, clean the spring onions and cut into rings, peel and chop the garlic, chop the dried tomatoes, salt the meat and add the oil, everything is good mix and let it steep a little. In these times
  • Clean and halve the mushrooms, peel the onion and cut into rings, heat some fat in a saucepan, roast the onion and mushrooms in it and stir continuously, add the cream and stir in the parsley

  • Now put the meat in a hot pan and sear it until crispy, do not stir too much so that roasting substances can form on the bottom of the pan. If the meat is crass all around, add the tomato paste and let it caramelize ... now pour the vegetable stock and simmer for 10 minutes , season again to taste with a little sauce thickener and serve with champis and potatoes ......
  • Grains of Paradise are a mixture of different types of pepper and taste like pepper as well as cardamom and have notes of ginger and cinnamon. It was not for nothing that it was named after paradise. Grains of Paradise go well with pork, pumpkin, potatoes and vegetables You may know the taste of grains of paradise from old sausage or mulled wine recipes.
  • You can of course pickle the meat without grains of paradise ... just use salt and pepper, possibly paprika powder ...
