Creamy Soy Curry with Sweet Potatoes and Broccoli

- 3 Carrots
- 800 g Sweet potatoes
- 200 g Potatoes
- 2 Broccoli, not too big
- 2 Shallots
- 2 Garlic cloves
- 3 tbsp Oil
- Curry, salt, pepper
- 400 ml Vegetable broth
- 2 Soy cream
- Wash, peel and cut the carrots into small slices. Wash, peel and dice the sweet potatoes and potatoes, about 2 cm in size. Wash the broccoli, remove the stalk, cut into small florets. Peel and finely dice shallots and garlic.
- 3 Heat a tablespoon of oil in a large saucepan over medium to high heat and fry the carrots, sweet potatoes and potatoes for about 8 minutes. Add broccoli, shallots and garlic cubes, fry for about 2 minutes and season with curry, salt and pepper.
- Deglaze the vegetables with the broth, add the soy cream and cook for about 6-8 minutes on medium heat with the lid closed. Enjoy your meal!
