Creamy Soy Curry with Sweet Potatoes and Broccoli

  • 3 Carrots
  • 800 g Sweet potatoes
  • 200 g Potatoes
  • 2 Broccoli, not too big
  • 2 Shallots
  • 2 Garlic cloves
  • 3 tbsp Oil
  • Curry, salt, pepper
  • 400 ml Vegetable broth
  • 2 Soy cream
  1. Wash, peel and cut the carrots into small slices. Wash, peel and dice the sweet potatoes and potatoes, about 2 cm in size. Wash the broccoli, remove the stalk, cut into small florets. Peel and finely dice shallots and garlic.
  2. 3 Heat a tablespoon of oil in a large saucepan over medium to high heat and fry the carrots, sweet potatoes and potatoes for about 8 minutes. Add broccoli, shallots and garlic cubes, fry for about 2 minutes and season with curry, salt and pepper.
  3. Deglaze the vegetables with the broth, add the soy cream and cook for about 6-8 minutes on medium heat with the lid closed. Enjoy your meal!
