Bread: Quino Bread

  • 125 g Quinoa
  • 1 dice Yeast fresh
  • 1 Tl Sugar
  • 250 g Spelled flour type 630
  • 150 ml Water warm
  • 250 g Wholemeal rye flour
  • 1 Pck Dry sourdough
  • 2 Tl Salt
  • 2 El Oil
  1. Cook the quinoa in plenty of water and drain well. Mix yeast with sugar 3 tablespoons spelled flour and 6 tablespoons warm water and let rise for 10 minutes.
  1. Mix the two types of flour with sourdough and salt, then add the flour mixture and quinoa as well as water and oil to the pre-dough, knead everything for 10 minutes with the machine. Cover the dough and let it rest for 2 hours.
  1. Knead again, if necessary, add a little more flour, score the dough in a mold and let rise for another hour, covered.
  1. Preheat the oven to 250 C ° (no convection), add the bread and after 10 minutes switch to 190 C °, now bake for about 50 minutes.
