Bread: Quino Bread
The perfect bread: quino bread recipe with a picture and simple step-by-step instructions.
- 125 g Quinoa
- 1 dice Yeast fresh
- 1 Tl Sugar
- 250 g Spelled flour type 630
- 150 ml Water warm
- 250 g Wholemeal rye flour
- 1 Pck Dry sourdough
- 2 Tl Salt
- 2 El Oil
- Cook the quinoa in plenty of water and drain well. Mix yeast with sugar 3 tablespoons spelled flour and 6 tablespoons warm water and let rise for 10 minutes.
- Mix the two types of flour with sourdough and salt, then add the flour mixture and quinoa as well as water and oil to the pre-dough, knead everything for 10 minutes with the machine. Cover the dough and let it rest for 2 hours.
- Knead again, if necessary, add a little more flour, score the dough in a mold and let rise for another hour, covered.
- Preheat the oven to 250 C ° (no convection), add the bread and after 10 minutes switch to 190 C °, now bake for about 50 minutes.
