Gorgonzola Spinach Gnocchi; Vegetarian and Mediterranean

- 350 g Frozen spinach leaves
- 1 Pc. Onion
- 1 Pc. Clove of garlic
- 150 g Creamy gorgonzola
- Salt pepper
- 1 tbsp Olive oil
- 100 ml Vegetable broth
- 150 ml Cream or cremefine
- 600 g Gnocchi from the refrigerated shelf
- 3 tbsp Walnut kernels
- Chili powder
- 2 tsp Lemon juice
- Peel and finely chop the onion and garlic. Sweat in the heated oil in a large pan. Add the frozen spinach and simmer while stirring until it is thawed. Then pour in the broth and cream.
- Cut the gorgonzola into pieces and stir in. Let melt slowly over low heat.
- Cook the gnocchi in boiling salted water for a few minutes until they float to the surface. Then pour into a sieve and stir into the spinach sauce. Season the sauce with salt, pepper, chilli powder and lemon juice. Roughly chop the walnuts and sprinkle over the dish.
