Gorgonzola Spinach Gnocchi; Vegetarian and Mediterranean

Ingredients
 

  • 350 g Frozen spinach leaves
  • 1 Onion
  • 1 Clove of garlic
  • 150 g Creamy gorgonzola
  • Salt pepper
  • 1 tbsp Olive oil
  • 100 ml Vegetable broth
  • 150 ml Cream or cremefine
  • 600 g Gnocchi from the refrigerated shelf
  • 3 tbsp Walnut kernels
  • Chili powder
  • 2 tsp Lemon juice

Instructions
 

  • Peel and finely chop the onion and garlic. Sweat in the heated oil in a large pan. Add the frozen spinach and simmer while stirring until it is thawed. Then pour in the broth and cream.
  • Cut the gorgonzola into pieces and stir in. Let melt slowly over low heat.
  • Cook the gnocchi in boiling salted water for a few minutes until they float to the surface. Then pour into a sieve and stir into the spinach sauce. Season the sauce with salt, pepper, chilli powder and lemon juice. Roughly chop the walnuts and sprinkle over the dish.
