Gorgonzola Spinach Gnocchi; Vegetarian and Mediterranean

The perfect gorgonzola spinach gnocchi; vegetarian and mediterranean recipe with a picture and simple step-by-step instructions.

  • 350 g Frozen spinach leaves
  • 1 Pc. Onion
  • 1 Pc. Clove of garlic
  • 150 g Creamy gorgonzola
  • Salt pepper
  • 1 tbsp Olive oil
  • 100 ml Vegetable broth
  • 150 ml Cream or cremefine
  • 600 g Gnocchi from the refrigerated shelf
  • 3 tbsp Walnut kernels
  • Chili powder
  • 2 tsp Lemon juice
  1. Peel and finely chop the onion and garlic. Sweat in the heated oil in a large pan. Add the frozen spinach and simmer while stirring until it is thawed. Then pour in the broth and cream.
  2. Cut the gorgonzola into pieces and stir in. Let melt slowly over low heat.
  3. Cook the gnocchi in boiling salted water for a few minutes until they float to the surface. Then pour into a sieve and stir into the spinach sauce. Season the sauce with salt, pepper, chilli powder and lemon juice. Roughly chop the walnuts and sprinkle over the dish.
