- 2 size Potatoes
- 3 Carrots
- 2 yellow Beets fresh
- 2 Parsley roots
- 1 Leek
- 1 pole Celery fresh
- 3 tablespoon Extra virgin olive oil
- 1 thickness Onion in strips
- 1 Garlic clove crushed
- Meat broth to fill up
- 1 tablespoon Herbs of Provence
- 4 Wiener sausages
- 200 ml Cream
- 1 bunch Fresh smooth parsley
- Prepare all ingredients in the usual way, then cut into pieces suitable for soup or Cut slices.
- Heat the oil in a large saucepan. Fry the onion slices in it until translucent, add the vegetables with the potatoes and sauté briefly. Pour in enough meat stock to cover everything with liquid.
- Season with herbs from Provence, a little salt and the garlic clove and cook the soup covered for a good 30 minutes over a mild heat.
- At the same time, put the wieners in boiling water, remove from the stove and warm up. Set aside a few parsley leaves for garnish, finely chop the rest and add to the soup.
- Finally process the soup with the hand blender, adding the cream. If it is not liquid enough, simply pour in some more hot broth and season again with salt and pepper.
- Cut the Wienerle diagonally into bite-sized pieces and place them in the soup. Serve sprinkled with parsley leaves.
