For a delicious chocolate cream, you need the following ingredients: 200g couverture, 3 egg yolks, 40ml milk, 200ml cream, and some cinnamon and ginger powder to taste

  1. Put the couverture in a metal bowl. The bowl should be temperature resistant. Heat the couverture over a water bath.
  2. Add 2 teaspoons of cinnamon and ginger powder to the melted couverture.
  3. Get a second bowl. Put in the yolk.
  4. Mix the egg yolk with some milk. Beat the mass until it is creamy.
  5. Carefully add the melted couverture to the egg yolk and milk mixture. Fold in the chocolate.
  6. Whip the cream and fold it into the mixture in small amounts. Be careful not to whip the cream too stiff. It should have a creamy consistency.
  7. Pour the chocolate cream into small dessert bowls. Chill the dessert for at least an hour.

Tips for a successful chocolate cream

Use the following tips to conjure up the perfect chocolate cream:

  • Top the chocolate cream with chocolate sprinkles. Fresh raspberries or strawberries are also suitable.
  • Use pasteurized egg whites from the pack for the cream and take them out of the fridge well in advance of serving. The egg white causes the cream to have a harder firmness than regular eggs.
  • Use a serrated knife to chop the chocolate.
  • Do not whip the cream completely. Otherwise, it does not combine so well with the couverture.
  • For raw eggs, make sure they are completely chilled and fresh.
  • The more cocoa in the chocolate, the better the chocolate cream binds.
  • A water bath should never be too hot. As little as 30 degrees is enough to melt the chocolate. Otherwise, the chocolate may curdle or clump.
  • Always fold in the cream. This makes the cream creamy and fluffy.
