Ingredients for 3 servings:
- 40 g butter
- 50 g bacon
- 2 m.-sized potatoes
- 80 g cheese, grated (Emmental)
- some parsley, finely chopped
- some chives, in rolls
- 7 eggs
- 1 onion(s), diced
- 80 g vegetables (carrots, mixed peas or other), frozen or leftovers
- Salt and pepper, from the mill
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Dice the bacon and fry. Remove from the pan and fry the sliced onion in the fat until golden brown, then remove from the pan. Peel the raw potatoes and slice them thinly (a bread slicer works well). Add the butter to the pan and fry the potatoes until golden brown and crispy. Return the onions and bacon to the pan, add the thawed or blanched vegetables, and toss everything for a few minutes. Whisk the eggs with the cheese, herbs, and spices, pour over the potatoes, cover, and simmer over low heat for about 5 minutes until set. A slice of farmhouse bread goes well with this.
