Hessian Carbonara

Ingredients for 1 servings:

  • 125 g pasta
  • 70 g bacon or ham, diced
  • some olive oil
  • ½ roll(s) Handkäse, matured (preferably from the Birkenstock cheese dairy), diced
  • 3 eggs
  • e.g. salt and pepper
  • some caraway seeds, optional

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook the pasta according to the package instructions. Meanwhile, fry the diced bacon in a little olive oil in a pan and then remove from the heat. Ladle the cooked pasta directly from the pot with a little of the pasta water into the pan with the fried bacon. Add the diced cheese and let it melt, stirring for about 1 minute. Whisk the eggs in a bowl, season with salt and pepper, and pour over the pasta. Stir until set slightly, until a creamy sauce forms. Then quickly remove from the pan and serve on a plate. Sprinkle the “Hessian Carbonara” with some caraway seeds, if desired.
