Cod in mustard cream

Ingredients for 5 servings:

  • 750 g cod fillet(s) (150 g per portion)
  • 6 tbsp butter
  • 6 tbsp lemon juice
  • 2 tbsp flour
  • Salt
  • Pepper, white
  • 200 g butter
  • 4 tbsp mustard, medium hot
  • 400 ml sweet cream
  • 1 pinch(s) of cayenne pepper
  • Salt
  • 1 pinch(s) of sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Rinse the cod fillets and dry with kitchen paper. Drizzle with lemon juice on both sides, season with pepper, salt, and lightly flour. Heat the butter in a pan and fry the fillets for about 6 to 8 minutes on each side until golden brown. For the sauce, combine the butter and mustard in a small saucepan and stir to melt. Pour in the cream and season with cayenne pepper, salt, and sugar. Bring the sauce to a boil, then reduce the heat to low and reduce slightly. Stir frequently with a whisk.
