Ingredients for 4 servings:
- 1 kg potato(s), waxy
- 2 onions
- 100 g bacon, streaky
- salt and pepper
- marjoram
- Oil and butter
- 4 eggs (optional)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Boil the potatoes in their skins the day before. Let them cool, peel them, and refrigerate. The next day, slice the potatoes. Finely dice the onions. Cut the bacon into thin strips. Melt butter with a little oil in a large non-stick frying pan. Fry the bacon until golden brown, then remove from the pan. Add the potatoes to the pan with the fat and fry slowly over medium heat. Don’t turn them too often. After about 15 minutes, add the onions. Yes, with that amount of cooking time, it really does take that long to fry the potatoes until they are nice and golden brown. You can, of course, use two frying pans; the result is even better. Season with salt, pepper, and marjoram at the end and reduce the heat. Return the bacon to the pan, toss everything, and enjoy the fried potatoes. If you like, you can also crack in the eggs. You can either let them set as they are or mix them with the potatoes.
