Farmer's sauce

Ingredients for 10 servings:

  • 10 Mettenden
  • 4 slice(s) bacon, streaky
  • 500 g smoked pork
  • 4 bay leaves
  • 1 tsp allspice berries
  • 1 tsp juniper berries
  • 1 cup flour
  • 1 ½ liters of water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Cut the bacon into roughly 2 cm cubes and pierce the sausages a few times. Bring all ingredients except the flour to a boil in a saucepan, then simmer for about an hour at low heat. Remove the meat and set aside. Combine the flour with a little cold water in a shaker and add to the stock. Bring to a boil briefly to thicken the sauce. Add more flour water if needed until a creamy sauce forms. Then add the meat back in. Finally, season with salt and pepper. We serve it with sauerkraut and bread rolls. This is our traditional Christmas dinner on Christmas Eve and was first cooked by my great-grandmother.
