Ingredients for 4 servings:
- 1 kg potatoes
- 150 g parsley (chopped)
- 2 tbsp butter or oil
- some flour (2 – 3 tbsp)
- 350 ml vegetable stock
- 200 ml milk or liquid cream
- salt and pepper
- 1 ring/s of meat sausage

Boil the boiled potatoes and set aside. Gently heat the fat in a saucepan, sprinkle with flour, and make a light roux. Deglaze with vegetable stock and then add milk or cream, enough to make a slightly thickened mixture. Add salt and pepper to taste. Add the parsley and stir briefly. Add the potatoes and, finally, add the skinless sausage (cut into larger pieces) and heat briefly.
