Cook the lentils in the vegetable broth in a pressure cooker for 10-15 minutes. Meanwhile, brown the bacon cubes in the goose fat. After cooking, combine the bacon, lard, and lentils. Season the lentils with sugar, vinegar, and salt. The specified quantities are not always accurate; seasoning is important. If one of the three flavor components is lacking, adjust the seasoning accordingly. The dish is essentially ready. The lentils can be prepared a few hours in advance. Letting them simmer for longer improves the flavor. We serve the lentils with boiled potatoes and cooked sausage. Both are cooked separately.
