Ingredients for 4 servings:

  • 500 g ribs, thick
  • 2 bay leaves
  • 1 point pearl barley (medium or fine)
  • 500 g carrot(s)
  • 500 g potatoes, preferably floury
  • 250 g celery
  • 1 stalk(s) leek
  • 2 onions
  • 1 pc. bacon, diced
  • 2 ½ tbsp broth (instant)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

pearl barley soup

Half-fill a large soup pot with water. Add the thick rib and the two bay leaves. Simmer for 15 minutes. Add the pearl barley. Simmer for another 15 minutes. Clean and finely dice all the vegetables, and add them to the soup. Simmer for another 30 minutes. Finely dice one onion and fry with the bacon cubes. Add to the finished soup. Season to taste with 2.5 heaped tablespoons of instant broth, salt, and pepper.
