Grandma's Quark Kneads

Ingredients for 4 servings:

  • 500 g jacket potatoes
  • 500 g low-fat quark
  • 150 g flour
  • 1 egg(s)
  • Oil or lard

Press the potatoes through a ricer and knead with the other ingredients (except the oil) to form a smooth dough. If the dough is still too wet, knead in a little more flour. With heavily floured hands, form the dough into “Keulchen” (small drumsticks). These are about 1 cm thick and 7-8 cm in diameter. Fry in hot oil until golden brown. Traditionally, these drumsticks are sprinkled with sugar and eaten with applesauce. If you like, you can also knead raisins into the dough. Serve with coffee.
