Finger noodles made from dumpling dough, baked with egg milk

On a floured board, form the dumpling dough into schopperl (finger-thick noodles). Cook them in salted water for about 5 minutes. In the meantime, preheat the oven to 200°C and whisk the eggs with the milk. Season with salt to taste. Place the cooked schopperl in a greased baking dish. Pour the egg mixture over them and let them set in the oven. This takes about 35 minutes. Serve with a green salad. If desired, add more salt to the schopperl. To each his own, it’s best to use a neutral oil.
