Potato soup 'quick and easy'

Ingredients for 4 servings:

  • 1 liter vegetable broth
  • 6 large potatoes
  • 1 bunch of soup vegetables
  • 1 cup of crème fraîche or sour cream
  • 1 small onion(s)
  • 4 sausages (Mettwurst)
  • 4 sausages (Vienna)
  • 1 cup of cream or milk
  • salt and pepper
  • Rosemary or thyme

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean the potatoes and vegetables, cut them into small cubes, and cook them in the vegetable broth until soft. Set aside 4 tablespoons of the cooked potato cubes. Purée the soup in a blender or with an immersion blender. Return it to the pot and bring to a boil. Add the crème fraîche and cream or milk. Slice the sausages and heat them in the broth until hot. Add the potato pieces back in. Season to taste with salt, pepper, and herbs.
