Pichelsteiner with fish

Ingredients for 4 servings:

  • ½ kg potatoes
  • ½ kg fish fillet(s) (firm-fleshed sea fish)
  • ½ kg vegetables (carrots, leeks)
  • 1 onion(s)
  • 1 lemon(s), the juice
  • Salt
  • pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Peel and wash the potatoes and cut into 2 x 2 cm cubes. Trim and wash the vegetables and cut into bite-sized pieces. Clean the fish under cold, running water and pat dry. Lightly salt and let it marinate with the lemon juice. Peel the onion and chop into larger pieces. Add salt to approximately 2 liters of water and bring to a boil. First, add the potatoes to the boiling water and after 15 minutes, add the vegetables and onions. Once the vegetables are almost tender, add the fish cubes. Let it simmer for about another 15 minutes over low heat. Finally, stir in the parsley. Serve with fresh baguette and white wine.
