Tomatoes – peppers – vegetables with feta cheese and sucuk

Ingredients for 2 servings:

  • 4 tomatoes
  • ½ bunch of spring onions
  • 3 cloves garlic
  • 2 pointed peppers, red
  • 2 bell peppers, dark green, elongated
  • 200 g sheep’s cheese (or feta)
  • Pepper, black from the mill, Pul Biber
  • Salt
  • some olive oil
  • Sausage, Sucuk (Turkish sausage)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the tomatoes and line about 2/3 of a baking dish with them. Slice both peppers into rings. Dice the onions, crush the garlic, and strip the thyme leaves from the sprigs. Roughly crumble the feta cheese and mix loosely with the onions and garlic. Spread everything on top of the tomatoes, season with pepper, pul biber, and salt if desired (careful, the feta cheese is salty), and drizzle with the thyme and a little olive oil. Cook in a preheated oven at 180 degrees Celsius for about 15 minutes. Peel the sucuk, cut it in half lengthwise, and place the halves in the baking dish next to the vegetables. Return to the oven for another 15 minutes, turning the sucuk occasionally. You can also add the sausages from the beginning; they will then become quite crispy. Serve with Turkish yogurt mixed with a little garlic, salt, and perhaps grated cucumber, and pita bread.
