Menemen with Sucuk – Turkish Farmer's Breakfast

Ingredients for 4 servings:

  • 3 m.-sized onion(s)
  • 1 small chili pepper(s), red, medium hot
  • 200 g sucuk
  • 1 tbsp olive oil for frying
  • 300 g pointed peppers, green, Turkish
  • 1 ½ small cans of tomatoes, chopped or whole, approx. 400 g each
  • ½ bunch parsley, flat
  • 1 tbsp paprika powder
  • ½ tsp pepper
  • ½ tsp salt
  • 1 pinch(s) of sugar
  • 4 eggs
  • 100 g sheep’s cheese, optional
  • 1 flatbread(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Dice the onions. Slice the chili pepper. Peel and slice the sucuk. Fry everything in a pan and simmer for 10 minutes. Slice the bell peppers. Add the strips to the pan and simmer for another 5 minutes. Add the tomatoes and spices and cook for another 5 minutes. Add the chopped parsley. Crack the eggs into the pan, but don’t stir. If you like, you can add feta cheese. If using an ovenproof pan, let the eggs set for 10 minutes in the oven at around 160°C (top/bottom heat). Otherwise, let them set on the stovetop with the lid closed and the heat low. Enjoy the dish with flatbread.
