Ingredients for 1 servings:

  • ½ Sucuk
  • 1 spring onion(s)
  • ½ onion(s)
  • 3 bell pepper(s), Turkish, long
  • 15 g butter
  • 300 g tomatoes
  • Salt
  • Paprika powder, sweet
  • 35 g feta cheese, Turkish
  • 2 eggs
  • Pul Beaver
  • Pepper, from the mill
  • some parsley, finely chopped

Working time approx. 10 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 28 minutes

Turkish scrambled eggs with garlic sausage

Cut the sucuk (garlic sausage) into fairly large cubes. Dice the onion, finely ring the spring onion (without the green part) and slice the bell pepper into thin strips. Deseed and dice the tomatoes. Sauté the sucuk, onion, spring onion and bell pepper in a dry pan for 5 minutes. Then add the butter and tomatoes and simmer for a further 10 minutes, until a thick sauce forms. You can season this with a little salt and paprika. Meanwhile, put the eggs in a bowl, season with salt and a little Pul Biber and whisk lightly so that the yolks separate a little. Crumble the feta and stir in briefly. Then add the egg and some freshly chopped parsley to the mixture. Stir the egg until set, just like normal scrambled eggs. Menemen sucuklu is eaten for breakfast in Turkey, so it’s also great for brunch (for visitors). It goes well with, for example, E.g. rolls, white bread or whatever you like.
