Ingredients for 4 servings:
- 500 g zucchini
- 3 spring onions
- ½ bunch parsley
- 3 sprigs of mint or dill
- 50 g cheese (Gruyère)
- 2 eggs
- 50 g flour
- pepper, black
- 6 tbsp olive oil, for frying
- Salt
Instructions

Wash, trim, and grate the zucchini. Mix with 1/2 teaspoon of salt and let stand for 10 minutes. Meanwhile, wash and trim the spring onions and slice into very thin rings. Wash the herbs, shake dry, and finely chop. Grate the cheese. Place the zucchini in a sieve and squeeze out any excess water. Then mix with the spring onions, cheese, herbs, eggs, and flour. Season with salt and pepper. Heat a little oil in a large pan. Place small fritters, each made from 1 heaped tablespoon of the zucchini mixture, in the pan. Fry over medium heat for about 4 minutes on each side until golden brown. Drain the fritters on kitchen paper. Serve hot or cold with garlic yogurt.
