Ingredients for 4 servings:
- 450 g cod fillet(s)
- 6 potatoes
- 1 large onion(s)
- 2 slices of ham (Serrano ham)
- 2 cloves garlic
- 1 red chili pepper(s)
- 1 tsp mustard seeds
- 1 tbsp oil (olive oil)
- 120 ml vegetable stock
- 50 g cheese (Manchego, medium-aged)
Instructions

Prepare the ingredients: Dice the potatoes, cut the ham into thin strips, quarter the onions and slice them into thin rings, deseed and finely chop the chili, and finely grate the garlic cloves with the back of a knife. Cut the fish into bite-sized cubes, season with salt, and drizzle with a little lemon juice. Heat the oil in a pan, add the mustard seeds, and heat until they begin to pop. Stir briefly until they continue to pop and burst, then immediately add the potatoes, ham, and onions. Fry everything for 10-15 minutes on all sides, until the potatoes are evenly browned. Add the garlic and chili and cook for another 2 minutes. Add the fish cubes and cook for 4 minutes, until the fish turns a whitish color. Then add the stock and cook the fish for about 5 minutes. Transfer everything to an ovenproof dish, sprinkle with the grated cheese, and grill in the oven for 2-3 minutes until the cheese is golden brown. Serve with a strong white wine.
