Ingredients for 4 servings:
- ½ bulb(s) garlic
- 1 pointed pepper, green
- 1 cup olive oil
- ¼ cup vinegar
- 1 tsp cumin
- 1 bunch of coriander or parsley
- Salt, coarse

Mojo verde – green garlic sauce from the Canary Islands with coriander and paprika
Peel and roughly chop the garlic. Trim and roughly chop the bell pepper. Wash the cilantro, shake dry, and pick off the leaves. Blend everything with the olive oil and vinegar using a hand blender. Season with ground cumin and salt.
