Ingredients for 4 servings:

  • 1 bell pepper(s), red
  • 2 peppers, red, hot
  • 2 tomatoes, dried
  • 1 bulb(s) garlic
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp saffron threads
  • 1 tsp paprika powder to taste
  • 75 ml vinegar
  • 1 cup(s) olive oil (approx. 200 – 250 ml content)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the peppers, chili peppers, tomatoes, and garlic cloves, roughly chop them, and blend them with the spices in a blender until you have a smooth sauce (Tip: If the sauce is too thin, you can thicken it with some breadcrumbs). Mojo is traditionally served with papas arrugadas (Canarian wrinkled potatoes), which are eaten with the skin on.
