Red Mojo Sauce

Ingredients for 4 servings:

  • 75 g white bread, fresh
  • 3 tbsp red wine vinegar
  • 2 tbsp water, warm
  • 3 cloves garlic
  • 1 chili pepper(s), red, fresh
  • 1 tbsp paprika powder, sweet
  • 1 tsp cumin, ground
  • ½ tsp oregano
  • 70 ml olive oil
  • 60 ml sunflower oil, or another neutral oil
  • Salt

Working time approx. 15 minutes; Total time approx. 15 minutes

Recipe by Benito from Tenerife, very good with fresh, new potatoes

Remove the crust from the bread, chop it finely, mix it with vinegar and 2 tablespoons of lukewarm water, and set aside. Crush the garlic and finely chop the chili (including the seeds, if you prefer). Add both to the bread along with the spices. Then slowly mix in the oil. If the sauce is too thick, add a little more warm water. Season with salt.
