Ingredients for 2 servings:
- 2 slices of strong white bread without salt (Pan sin Sal)
- 4 tomatoes, very ripe; (the Mallorcans have a special variety of tomatoes for Pamboli)
- Fleur de Sel (Flower of Salt)
- 2 tsp olive oil, very good, from the first pressing
- Pepper, coarse

Typical Mallorcan starter
The Spanish use their unsalted bread, “Pan sin Sal,” for this. However, you can also use fresh white bread or slightly toasted older bread. I also make it myself at home. Oil the slices of bread, wash the tomatoes, and cut out the stems. Then squeeze the tomatoes onto the slices. I also added a little chopped tomato, but it’s not necessary. Sprinkle the coarse flor de sal and pepper over the bread. If you like, you can also add garlic and paprika seasoning. This bread is eaten with ham or cheese. I think it makes a delicious side dish for a barbecue. Or as an appetizer for a Spanish meal. The bread can also be rubbed with a clove of garlic. I used Spanish garlic and paprika seasoning here.
