Ingredients for 4 servings:

  • ½ kg chestnuts
  • 200 g whipped cream
  • 3 egg yolks
  • 1 vanilla pod(s)
  • 2 bars of semi-sweet chocolate
  • ½ liter of milk
  • 100 g butter
  • 100 g cane sugar

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Chestnut cake for Christmas time

Heat the chestnuts in a non-stick pan and then peel them. Heat the milk in a saucepan and cook the chestnuts until soft. Now puree the chestnuts and mix in the vanilla pod, 75g butter and the sugar. Mix everything together until finely blended. Melt a bar of chocolate in a double boiler. Beat the egg yolks with a little sugar and slowly add the melted chocolate. Then add the whipped cream and let it cool. Place the cooled chestnut mixture in the shape of a rectangle on baking paper and spread the chocolate mixture on top. Roll the whole thing up from the long side and chill in the refrigerator for 2 hours. Then melt the other bar of chocolate in a double boiler and mix it with the rest of the butter. Pour the mixture over the chestnut roll and let it cool. Finally, use a fork to score grooves in the chocolate skin to create a tree trunk shape.
