Ingredients for 1 servings:

  • 250 g butter, soft but not liquid
  • 250 ml sugar
  • 750 ml oat flakes
  • 1 tbsp cocoa powder
  • 1 tbsp vanilla sugar
  • 50 ml coffee, ready brewed
  • 250 g desiccated coconut

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Swedish oat balls

First, mix the butter and sugar together until the sugar is almost dissolved (you don’t want it to crunch between your teeth). Continue stirring until the mixture is fluffy. Add the oats, cocoa powder, vanilla sugar, and the brewed coffee. Mix everything together. Caution! Don’t use an electric mixer, as the mixture will tend to become too thin. Form the oat mixture into small balls about 4 cm in diameter and roll them in the coconut flakes. Then refrigerate for about 30 to 1 hour to firm up. Great with fika (Swedish for coffee break)!
