Swedish apple sponge cake

Ingredients for 1 servings:

  • 125 g butter
  • 125 ml milk
  • 4 eggs
  • 200 g sugar
  • 300 g flour
  • 3 tsp, leveled baking powder
  • 1 kg apples, sour, e.g. Boskoop
  • 40 g almond(s), chopped
  • 100 g sugar
  • 2 tsp cinnamon
  • Fat and flour for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the butter and milk to a boil. Beat the eggs and sugar until frothy, then stir in the hot milk. Fold in the flour and baking powder mixture. Pour the batter into a greased and floured roasting pan. Peel and core the apples, thinly slice them, and place them on the batter. Mix the almonds with the sugar and cinnamon, sprinkle them on the cake, and bake. Electricity: 200-225 degrees Celsius (fan oven) for 30-35 minutes, leave in the off-circuit oven for 5-10 minutes. Gas mark 3-4.
