Ingredients for 4 servings:
- 1 kg low-fat curd cheese
- 4 egg yolks
- 100 g flour
- ¼ tsp salt
- 2 tbsp sugar
- Butter, for frying
- e.g. sour cream
- n. B. Honey
- e.g. jam
- e.g. raisins, a handful
- Flour , for the worktop

Russian sweet curd fritters
Place the quark in a cheesecloth-lined colander, cover with a kitchen towel, and weigh it down with a heavy pot. Let stand for 2 to 3 hours, until all the liquid has dripped out. Place the quark in a bowl, add the egg yolk, and beat until smooth. Gradually stir in the flour, salt, and sugar. The dough will be quite firm and dry. Shape the mixture into 4 balls, then form each one into a “sausage” about 5 cm in diameter on a lightly floured surface. Wrap each sausage individually in aluminum foil and chill for at least 30 minutes. Using a large knife, cut out approximately 2 cm thick slices of dough and fry in a buttered pan over medium heat for 3-5 minutes on each side until golden brown. Keep warm until all are cooked. They are traditionally served with sour cream, but they are also delicious with a little honey or jam. You can also add raisins. The syrniki are served with tea, but they also go very well at the (breakfast) buffet.
