Portuguese pudding with sweetened condensed milk

Ingredients for 6 servings:

  • 1 can condensed milk, sweetened (e.g. Milchmädchen, content 370 g)
  • 370 ml milk
  • 6 eggs
  • Sauce (caramel sauce, ready-made or homemade)

Preheat the oven to 180 degrees Celsius. Beat the eggs and condensed milk with a hand mixer. Then add the milk and mix briefly again. Pour the caramel into the pudding dish, ensuring the bottom and sides are coated with caramel. Pour in the pudding mixture and bake in a water bath for about 50-60 minutes. I use a special pudding dish for the pudding. It has a hole in the middle and a sealable lid. I then place the dish in a large casserole dish, which I then fill with boiling water. The pudding then cooks in it. Please leave the lid on during the cooking time. After about 45 minutes, you can check how far the pudding has gone. When the pudding is ready, remove it from the oven and let it cool in the dish. Once it has cooled completely, you can loosen the pudding at the edge of the hole using a sharp knife. Gently tap and rock it back and forth to remove it from the dish and turn it out. Caution: The caramel sauce is runny and will come out with the pudding! This is intentional, as it’s eaten alongside the pudding. Please only make the pudding with sweetened condensed milk. This recipe won’t work with regular condensed milk! The pudding can be prepared a day in advance, making it perfect for parties, etc. This is one of many different pudding recipes in Portugal. They’re very popular there, easy to make, and delicious!
