Potatoes with bacon and onions

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 onion(s), chopped
  • 3 tbsp oil
  • 175 g bacon (lean smoked bacon), finely chopped
  • 25 g coriander and parsley, chopped
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Fashionable Alentejo potatoes

Cook the potatoes until soft. Drain and slice. Meanwhile, sauté the onion in the oil until soft but not browned. Remove from the pan and keep warm. Add the bacon to the pan and cook until crispy. Add the potatoes and cook until browned on both sides. Gently stir the onion, cilantro or parsley, salt, and pepper into the potatoes and heat through. Serve.
