Pudding with caramel sauce from Portugal

Ingredients for 3 servings:

  • 250 ml egg(s)
  • 250 ml milk
  • 100 g sugar

Pudding Cazeiro – a typical Portuguese dessert

For a small pudding dish (with lid!): Beat the eggs, milk, and 100g of sugar well using a food processor or hand mixer. In the meantime, heat the water and sugar (approx. 100g, ratio about 1:1) in a small saucepan. Swirl the pan occasionally. Cook until the mixture turns brown. Carefully spread the caramel (caution: it’s VERY hot – make sure you wear gloves!!!) into the pudding dish. Then add the egg mixture and cook in a double boiler with the lid on for about 30 minutes. Do the toothpick test! Allow the pudding to cool slightly in the dish and then turn out onto a plate. For a large dish, simply double the quantity.
