Ingredients for 4 servings:

  • 600 ml milk
  • 4 egg yolks
  • 1 tbsp flour
  • 140 g sugar
  • Lemon(s) peel or 1 vanilla pod
  • Cinnamon

Beat the egg yolks with the sugar and flour, along with a pinch of salt. Add the hot milk and the lemon zest or vanilla pod, and whisk everything together well. Bring to a boil over high heat, stirring constantly, until the cream thickens slightly. When the cream is ready, remove the lemon zest or vanilla pod. Sprinkle the cream with sugar and caramelize the sugar with a hot iron, or simply sprinkle with cinnamon.
