Kulfi Panna Cotta

Ingredients for 6 servings:

  • 400 ml sweet cream
  • 200 ml milk
  • 80 g sugar
  • 1 stalk(s) cinnamon
  • 6 carnations
  • 6 cardamom pods, crushed
  • 4 grains allspice, crushed
  • 1 star anise
  • 3 sheets of gelatin

Instructions

Working time approx. 5 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 15 minutes; Total time approx. 4 hours 20 minutes

Indian – Italian fusion

Kulfi is an Indian spiced ice cream. This recipe combines exotic ingredients with the Italian classic. Heat the sweet cream, milk, sugar, and all the spices to just below boiling point and simmer for ten minutes. Strain through a fine-mesh sieve. Heat again and dissolve the softened gelatin. The gelatin is sufficient for a very soft panna cotta, just firm enough to turn out. If you prefer it firmer, you can add one or two more sheets of gelatin. Pour into small dessert molds and refrigerate for several hours to set. I served it with chocolate clay.
