Ingredients for 1 servings:
- 100 g sugar
- 1 lemon(s), untreated, juice and zest
- 1 egg yolk
- 25 g butter, melted

Fill a pot with water and bring it to a boil. Combine the sugar, lemon zest, and lemon juice in a heatproof bowl and mix. Add the beaten egg yolk and then stir in the melted butter. Place the bowl in the boiling water and stir regularly at low heat for about 45 minutes until the desired creamy consistency is reached. These quantities are sufficient for one jar of lemon curd. We recommend making 7-9 times the amount.
