Ingredients for 4 servings:

  • 1 liter rice vinegar
  • 500 g sugar
  • 250 g salt
  • 1 tsp soy sauce
  • 8 cm kombu seaweed

Rice marinade for the perfect sushi rice

For the perfect sushi rice, you need a rice marinade. To make the marinade, boil half of the rice vinegar, the sugar, and the salt with a kombu seaweed. As a reminder: Add about half the sugar to the rice vinegar (1 liter of rice vinegar -> 500 g sugar). Then add half the sugar to the salt (500 g sugar -> 250 g salt). Bring everything to a boil and simmer slightly. Then let it cool and add the rest of the rice vinegar. The finished rice marinade can then be incorporated into the finished sushi rice. The ratio is: 1 kg of sushi rice needs approximately 300 ml of rice marinade.
