Ingredients for 4 servings:

  • 800 g potato(s), floury or pre-cooked boiling solid
  • 150 g flour
  • 100 g butter
  • 4 tbsp milk
  • salt and pepper
  • Thyme, dried
  • possibly caraway

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Irish potato pancakes, makes 12 pieces

Peel the potatoes and cook in salted water until soft. Drain the water and mash the potatoes. Preheat the oven to 200°C. Add the butter to the hot potato mixture, then add the flour, milk, and a little salt and pepper. Mix everything together with a wooden spoon and place the dumpling on a floured work surface. Briefly work the dough with your hands and divide it into 12 portions. Roll them into balls, place them on a baking sheet lined with baking paper, and press them into 1 cm thick flatbreads. Sprinkle the flatbreads with thyme, press it down a little more, and then bake in the oven for about 40 minutes until golden brown. Caraway seeds can also be used to taste.
