Hearty potato pancakes

Ingredients for 1 servings:

  • 3 potato pancakes, frozen
  • 2 balls of frozen spinach (portionable frozen)
  • 1 m.-sized tomato(s)
  • 100 g herb cream cheese or herb quark
  • 1 tbsp cheese, grated (Gouda)
  • salt and pepper
  • n. B. Nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Own creation,

Thaw the spinach balls, season with salt, pepper, and nutmeg (if desired), and mix with the cream cheese. Preheat the oven to 170°C (fan oven). Wash the tomato and slice it thinly. Place a potato pancake in a small baking dish and spread with half of the spinach and cream cheese mixture. Then place a few tomato slices on top. Layer another pancake on top, then the remaining spinach and cream cheese mixture, more tomato slices, and the last pancake on top. Sprinkle with grated Gouda and bake for 20-25 minutes.
